The Jackalope – equal measures jackrabbit and antelope – has been reimagined into a stunning boutique destination, defiantly extravagant and grandiose; the Jackalope Hotel

Louis Li, an adopted Melburnian since 2007, hailing from the southern tourist town of Kunming in China, has reimagined his mythical apparition into a destination where the ideal and the surreal collide; a sensory journey that redefines and revolutionises the role of art, design and hospitality

Located within the 27-acre grounds of Willow Creek Vineyard, a premier cool climate vineyard in Merrick’s North, makes for an awe-inspiring natural backdrop to this modern masterpiece

The genius of Louis’ execution is in equal measures too – part profound vision, part recognition of the need to assemble the best minds around him and nurture the collection as his adopted colony.  In collaboration with Carr Design GroupFabio Ongarato Design and Taylor Cullity Lethlean, the team have created a space that redefines amenity and elevates your experience as a guest of the mythical jackalope

Comprising of 46 luxury rooms all featuring en-suite bathrooms, and floor to ceiling windows and private terraces to overlook the vast and ever changing views of the vineyard. Suites are fitted with beautifully custom-crafted furniture by Melbourne-based Zuster, complimenting Hunter Lab’s very own super natural grooming products found within the bathrooms

Hunter Lab collaborated with Louis and his team over the past year to create our latest super natural grooming products, Hydrating Hand & Body Lotion, Invigorating Shampoo and Nourishing Conditioner

Art is a grand feature, and it doesn’t come more striking than the 7-metre tall Jackalope sculpture standing guard at the hotel entrance – created by Melbourne artist Emily Floyd


If that’s not enough to get you planning a three day weekend, there’s a spot for you by the 30 metre black infinity pool and, for the grandest romantic rendezvous, a private enclave bookable for a couples massage or intimate fine-dining experience

Keeping to the sense of the mythical, the hotels extravagant bar and restaurants add homage to the jackalope, headed by Executive Chef Guy Stanaway. Flaggerdoot, the collective noun for a group of jackalopes, houses the hotel’s bar, whilst Doot Doot Doot, the leader of a Flaggerdoot, takes you on a daring modern dining experience of distinction, unique direction and exquisite culinary excellence

If you’re looking for a more casual, but no less marvellous affair the cosy Rare Hare is the perfect cellar door serving exquisite lunch and dinner experiences all year round. Geraldine McFaul is the head wine maker of the Willow Creek and Rare Hare brands, elegantly crafting the local vines into exquisite cool climate wines
